Big Sur downloaded update shows as Boot Runner volume

After moving some of our labs to Big Sur earlier this summer, machines that recently downloaded the 11.5.2 update are showing an additional macOS boot volume named “msu-target-AZ1AITPt” (the last set of characters seems to be random). Once the updates is installed, the volume goes away but is there an option to do something like “hide all other volumes”, or “only show these volumes” when setting up either the /Library/Preferences plist or the confiugration profile?

That is very strange. It sounds like a volume is being mounted and Boot Runner is showing it. You can definitely limit using profiles:
