Everything went will until I got the following message on log: Error mounting EFI on disk.
The target MacBook is new, running OS BigSur 11.2.
This can happen if the EFI partition is in a non-standard location or is corrupt. Can you run this command in terminal and see if it succeeds?
diskutil mount disk0s1
